Chickpea salad with balls and tahini dressing

A healthy and easy idea to expand your recipe book: chickpea salad with balls and tahini dressing.

It’s a 100% vegan dish, since we have chosen the vegetable balls HUVUDROLL from the Swedish Food Market, which do not contain any ingredient of animal origin.

Its contrast of taste will surprise you. What are you waiting for cooking it?

INGREDIENTS 

  •  24 units of vegetable balls HUVUDROLL
  • 400g. of boiled chickpeas
  • 1 cucumber
  • 1 sweet potato
  • A bunch of parsley
  • A bunch of mint
  • 1 lemon
  • 300g. of tahini
  • Salt (as you like)
  • Water

PREPARATION

  1. Remove the pulp of the cucumber and slice it.
  2. Chop the parsley.
  3. Peal the sweet potato and cut in dices. Then cook it in the oven for 15 minutes with a bit of oil at 180º.
  4. Add oil to the pan and cook the vegetable balls HUVUDROLL.
  5. For the dressing, mix the tahini with salt and lemon. If it turn out to be too thick, you can add a bit of water.
  6. On a plate add the sweet potato, then the mint leaves, the parsley, the drained chickpeas, the cucumber and the balls. Lastly, add as many dressing as you like.
