
Chickpea salad with balls and tahini dressing

INGREDIENTS
- 24 units of vegetable balls HUVUDROLL
- 400g. of boiled chickpeas
- 1 cucumber
- 1 sweet potato
- A bunch of parsley
- A bunch of mint
- 1 lemon
- 300g. of tahini
- Salt (as you like)
- Water
PREPARATION
- Remove the pulp of the cucumber and slice it.
- Chop the parsley.
- Peal the sweet potato and cut in dices. Then cook it in the oven for 15 minutes with a bit of oil at 180º.
- Add oil to the pan and cook the vegetable balls HUVUDROLL.
- For the dressing, mix the tahini with salt and lemon. If it turn out to be too thick, you can add a bit of water.
- On a plate add the sweet potato, then the mint leaves, the parsley, the drained chickpeas, the cucumber and the balls. Lastly, add as many dressing as you like.
