Plastic is easy to keep clean
A plastic chopping board is easy to use and easy to clean. Most can even be washed in the dishwasher. It's a good idea to use several different chopping boards - you avoid transferring flavors and smells between foods.
A chopping board for every task
There are many different kinds of chopping boards, and they're all good for different things. Kitchen work is also more hygienic when you use different chopping boards for different raw materials. Remember that the chopping board should be soft, so as not to damage the edge of the knife - materials like wood or plastic are preferable. Wooden chopping boards are more stable than plastic, while plastic is easier to lift and clean. You probably could use both kinds.
